| Honey Braised Lamb Shank |

Ingredients (serves 4):
2 tablespoons olive oil
4 lamb shanks
1 big onion, halved and sliced
3 cloves garlic, crushed
1/2 litre chicken stock or water
1/2 litre beef stock or water
1 tablespoon cumin
1 teaspoon ginger powder
2 tablespoons Alce Nero Organic honey
salt and pepper to taste
400g thinly-sliced potatoes |

Method:
Heat the olive oil in a frying pan to sear the lamb over high heat. When browned on both sides, add the sliced onion and crushed garlic cloves. Lower heat and sweat the onion and garlic for about 10 minutes. Add the rest of the ingredients, seasoning to taste with salt and pepper. Cover the pan with lid and simmer for about 2 hours. Remove the lamb shank and add the potatoes. Simmer for 10 minutes or until potatoes are cooked. |
