Ingredients (makes 1 loaf):
325g wholewheat flour
150g bread flour
25g rye flour
5g dried lavender flowers
7g instant dried yeast
30g Alce Nero honey
10g salt
60g Alce Mero extra-virgin olive oil
225ml water |

Method:
Place all the ingredients in the dough mixer. Mix 4 minutes on speed 1, and 6 minutes on speed 2. Remove and rest the dough, covered, for 30 minutes, or until doubled in volume.
Shape the dough as desired and prove, covered, until doubled, about 1 hour in a warm place.
Bake at 180°C to 190°C for around 35 minutes, or until bread is golden brown and sounds hollow when tapped. |
